Bean Quinoa Salad
Calling all my gluten-free Eaters! This dish will make you crave more with no guilty feeling. Made in less than 30 minutes, everyone at the dinner table will be reaching for seconds!

Ingredients
2 cups cooked quinoa
1 cup cooked black beans (use sodium free black beans in the can. Rinse before using)
½ cup chopped purple onion
½ cup chopped fresh Roma tomatoes
Chopped Basil (optional)
Prepare:
Combine 1 cup of quinoa and 2 ½ cups of chicken broth (mix thoroughly).
Cook on HIGH in the microwave for 20 minutes or until fully cooked and the liquid is gone. Option: cook on the stove. Bring the 2 1/2 cups of chicken broth to a boil then add the quinoa to the broth. Bring the flame down to medium and cook until broth is no longer visible and the quinoa has a fluffy texture.
Chop the onion and tomatoes and then combine all ingredients together.
Season with garlic salt and seasoning salt.
Dress It Up Options:
Salad:
Mix with baby kale or dark leaf green mix. Top with your choice of protein and drizzle with your choice of dressing. *Best with a olive oil lemon blend.
Side:
Serve with your choice of protein, ex: salmon, chicken, steak
